I’m a big proponent of plan and prep your weekly menu so you can eat healthy and stick to a budget.
Hard baked eggs are something one of my members turned me on to. It seemed easier to me to do large batch of eggs in the oven instead boiling them. So I’ve done both and I find my results to be more consistent and easier to peel than the latter. So this is how I do my eggs from now on.
Hard baked eggs
Preheat oven to 325°F
Place eggs directly on rack I do a staggered pattern to get as many as possible on. leave on to 20-25 min. depending on how you like your eggs done. When finished I like to use a pair of thongs to safely get them out of the oven into an ice bath. Once cooled I place them in the fridge for a quick meal, added to salad, or an easy breakfast.
